S'more Cookies
Graham Cookie Ingredients
  1. 1 cup graham cracker crumbs
  2. 1 1/4 cups all-purpose flour
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1/2 cup butter, room temperature
  6. 1/2 cup light brown sugar
  7. 1 large egg
  8. 1/3 cup granulated sugar
  9. 1 teaspoon vanilla
Chocolate Layer Ingredients
  1. Semi-sweet chocolate chips
Marshmallow Fondant Topping Ingredients
  1. Marshmallow Fondant (See our recipe: https://www.springerlejoy.com/Articles.asp?ID=295)
  2. Optional: We added about 1/4 teaspoon peppermint flavoring oil to our fondant. Add the flavoring oil to the melted marshmallows before adding the sugar.
For the Cookies
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine graham cracker crumbs, flour, baking soda, and salt. Set aside.
  3. In another owl, combine butter and sugars until creamy and smooth. Add egg and vanilla. Mix well. Slowly add the dry ingredients and mix until just combined.
  4. Roll dough out on floured surface to 3/8 inch or 8 mm using Springerle Joy's Dough Thickness Guides.
  5. Cut out desired shape and place on parchment lined baking sheet. Bake for 6-8 minutes until the edges are just golden brown. Cool on wire rack.
For the Chocolate Layer
  1. Place chocolate chips in microwave-safe bowl and microwave on medium for one minute. Stir. Microwave in increments of 15 seconds and stir until chocolate chips have melted. Spread about one tablespoon of chocolate on each graham cookie.
For the Marshmallow Fondant Topping
  1. Dust the mold and work surface with powdered sugar to keep the fondant from sticking. Make your impression with the springerle mold. Cut out fondant with desired cutter and place on top of the chocolate layer of the graham cookie.
