Ring in the New Year with Lime Curd Cookies!

Lime Curd Cookies
  1. 1 cup butter, room temperature
  2. 1 egg
  3. 1 1/3 cups powdered sugar
  4. ½ cup lime curd
  5. ½ teaspoon key lime flavoring oil
  6. 3 ½ - 4 cups flour
  7. ¼ teaspoon salt
  8. food coloring (optional)
  1. Cream butter and powdered sugar together.
  2. Add the egg, lime curd, and lime flavoring oil (and food coloring if desired). Mix well.
  3. Add the flour and salt. Mix until the ingredients are well combined.
  4. Dust the surface of your counter and rolling pin with flour and roll out the dough to a thickness of approximately ⅜ inch to ½ inch. (If your dough is too soft to work with, refrigerate it 15 minutes.)
  5. Dust the surface of your dough and your cookie mold with flour. Press the mold into the dough just far enough down to fill the mold cavity. Remove your mold and cut out the cookie.
  6. Place your cookies on a cookie sheet lined with parchment paper.
  7. Chill your cookie sheet full of molded cookies for at least 20-30 minutes.
  8. Take your cookie sheet out the fridge and immediately place on the center rack of the oven.
  9. Bake your cookies about 10-15 minutes (depending on the size of the cookie) in a preheated oven 320 degrees Fahrenheit (160 degrees Celsius). Check the cookies regularly.
